Chef Fritz- among his many other talents, is a renowned expert in the field of charcuterie, the culinary specialty that embraces the world of cured and smoked foods, as well as sausage-making, and after tasting our smoked products claimed that they exceed even his high standards.
As premier host of our Chef's Corner, Fritz will be developing delicious recipes using our products; answering customer questions; demonstrating techniques in future website videos; and helping us promote Hudson Valley regional products. As a longtime resident of the region, he shares this passion and discerning taste with us.

Fritz Sonnenschmidt, CMC, CCE, AAC has been deeply involved for over 50 years in the culinary field. He was Culinary Dean at The Culinary Institute of America (CIA) located in Hyde Park, NY. Chef Sonnenschmidt is one of the very few Certified Master Chefs in America- a remarkable professional distinction. He has won numerous culinary medals and was team captain of the NY Regional team for the 1984 and 1988 Culinary Olympics. He was named the American Culinary Federation's 1994 National Chef of the Year and was inducted into the American Academy of Chefs Hall of Fame in 2005. Fritz has also authored several books including The Professional Chefs Art of Garde Manger, 6th Edition, Dining with Sherlock Homes, Sherlock Holmes at the CIA and The American Harvest Cookbook. Several books are in progress and will be published in 2007.
