Turkey Salad in a Melon
Ingredients:
- 2 small honeydew melons
- 10 oz thinly sliced Smoked Turkey Breast
- 10 oz sliced Ham
- 7 oz red peppers sliced paper thin
- Mint leaves, fresh (optional)
To make Dressing:
· 2 oz. Balsamic vinegar
· 1 teaspoon of lime juice (or to taste)
· 3 teaspoons Remsburger Farms Honey
· Salt, pepper to taste
· 3 oz extra virgin olive oil
· Small red chili, finely diced
Instructions:
Cut each honeydew melon into 5 wedges
Make melon balls and smooth the wedges
Arrange Turkey, Ham, and melon balls, and red peppers on the melon skin and drizzle with dressing; garnish with fresh mint leaves in desired
